Every year craft winemakers explore new adventures through illustrious tales capturing the essence of our unique wines through our Restricted Quantities Premium Collection. We invite you to create, celebrate and share these wines with your family and friends.
The year 2021 marks Restricted Quantities 21st program, featuring an entirely European line-up of varietals. The number 21 and the Europe-focus led us to the concept of tarot.
What is Tarot? • From the mid-15th century in many parts of Europe, tarot cards were used to play various card games • In the late 18th century, some tarot packs began to be used as a trend for divination (fortune-telling) via tarot card reading Inspiration for theme • The number 21 (since 2021 is the 21st anniversary of the Restricted Quantities program and the “major arcana” tarot card pack has 21 trump cards) • European wine focus (because of tarot’s European roots).

Spain Tempranillo Merlot The Empress This dry, medium-bodied wine hints of deep red fruit with alluring aromas of plum and currant. Heady spices, earth and smoke linger with a moderate tannic finish. Why? Spain Tempranillo Merlot • A red blend that has proved popular in northern Spain, particularly Navarra, and in various parts of the New World. • Tempranillo's thick skins can sometimes lead to wines with tough tannins. Blending it with Merlot is ideal as the latter can smooth out these rough edges, making a more approachable wine. • Tempranillo merlot wines are generally rich and concentrated with berry fruit flavours. • Tempranillo • Has been adopted across the winegrowing world, but is still very much associated with the fine wines of Spain and Portugal. • Strawberries, tobacco and spice flavours can be found in many Tempranillo wines. • Merlot • Merlot has spread far and wide from its homeland in Bordeaux, and is found in many top wine regions around the world. • Merlot commonly exhibits cherry or caramel flavours but is perhaps more often recognized for its silky texture rather than for any one flavour. This makes it ideal for blending as it can smooth out more-tannic varieties.

Why? Spain Muscat • Spain is the fastest growing old world country - growth rate 2.3% • The Muscat grape is thought to be the world’s oldest known grape variety. • The grape is characterized by an intensely aromatic bouquet and a musky, fruity (mandarin orange, apricot, peach), honeyed flavour. • At present, Muscat wines are not mainstream wines but their presence is felt in every country in which wine is produced.

Why? France Cabernet Sauvignon • The world’s most popular red wine grape is a natural cross between Cabernet Franc and Sauvignon Blanc from Bordeaux, France. • Cabernet Sauvignon is loved for its high concentration and age worthiness. • Cab is a full-bodied red wine with dark fruit flavors and savory tastes from black pepper to bell pepper.

Why? Italy Nero d’Avola • If you love full-bodied dry reds like Cabernet Sauvignon or Syrah then Nero d’Avola (“nair-oh davo-la”) is your buddy. • This lesser-known Sicilian grape variety deserves more recognition as a wine to be taken seriously. • Nero d’Avola is known for its superbly bold fruit-driven flavours that range from black cherry to prune. • Nero d’Avola is one of the full-bodied wines of the world in the same boldness as Cabernet Sauvignon, Pinotage, and Syrah. • With Nero d’Avola you can expect moderately high acidity, but not so tart that the wine tastes overly spicy.

Why? France Rosé • Pink wine happily spans the colourspace between red and white wine, in a way, rosé is more like a state of mind. • Rosé happens when the skins of red grapes touch wine for only a short time. Where some red wines ferment for weeks at a time on red grape skins, rosé wines are stained red for just a few hours. • The epicenter of the Rosé wine world is in the South of France. There, along the Mediterranean, regional varieties like Grenache, Carignan and Syrah are blended together to make refreshingly dry Rosé. • The primary flavours of rosé wine are red fruit, flowers, citrus, and melon, with a pleasant crunchy green flavour on the finish similar to celery or rhubarb.

Restricted Quantities 2021 Kit Components
Yeasts in RQ2020 Kits Bourgovin RC212 This yeast was specifically developed in Burgundy, France for red wine fermentations to enhance varietal character by emphasizing ripe berry and fruit aromas. QA23 This yeast Originating from the Vinhos Verde region of Portugal, the QA23 was selected for enhancing the flavors and aromas of grapes utilized in the production of premium white wines. Recommended for styles such as, Chardonnay, Sauvignon blanc, Chenin Blanc, Colombard and Semillon, the QA23 produces fresh, fruity and clean wines.
French Oak Wine is aged together with wood to enhance the flavour, aroma and complexity of the wine through the extraction of the substances from the wood into the wine. When compared to American oak, French oak imparts more subtle flavours and firmer, but silkier tannins which is ideal for lighter wines. French oak contributes flavours such as cigar box, cinnamon, and coffee.
American Oak American oak is used by many winemakers for the aromatic sweetness it contributes to the wine. On the palate, American oak provides a tannin structure that accentuates the fruit on the mid palate. While on the nose, it will contribute aromas of vanilla, coconut, dill and mocha.
Dried Grape Skins The GenuWine Winery Dried Grape Skins included in our three red wine kits are made through a patented process of gently drying crushed whole grape skins to retain original colour and nutritional integrity. The skins are processed to maximize colour and flavour extractions so that all their goodness can be extracted in a five or six day fermentation period. Grape skins will add smooth tannins, robust colour, and rich aromas to your red wines, making them more complex and fuller-bodied. These bigger, bolder red wines will drink well while young, but the goodness from the skins will also continue to enhance the flavour of the wine when aged.
Premium Labels Showcasing our magnificent RQ21 wine collection with premium, custom designed labels that are likened to labels found in commercial wines. Each wine has its own personality that is representative of the tarot major arcana cards. Our 2021 RQ wines are symbolic and mystical!
