This past year has certainly increased our appreciation for staying active and spending time outdoors. Fresh-air outings can not only shake cabin fever but also boost health, thanks to vitamin D (from sunshine) and endorphins (those feel-good brain chemicals) from exercise. Of course, winter weather activities require a bit of extra preparation. Depending on the forecast and where you go, remember to dress in layers, including something water-resistant on the top. You can always shed a layer if necessary. Pay attention to your head, hands and feet, where heat escapes, and protect your eyes with sunglasses or goggles. If you’re using any gear or equipment, test them long before your outing. Kids, especially, may have outgrown something they wore last year. Do you remember how all the belts, snaps, straps and buckles work? You won’t want to waste time fiddling when you get to your destination (if you are taking a longer road trip, make sure you have an emergency kit in the car). Finally, check the destination’s website or call the facility, both as you’re planning and immediately before you go. Good Eats Spinach Quiche Portobello Caps Foods rich in vitamin D, such as the portobello mushrooms that are the focus of this satisfying dish, can boost your immune system. Serves 4. INGREDIENTS ¼ cup nonfat milk 4 portobello mushrooms 1 teaspoon low-sodium (3-inch diameter) garlic and herb blend Cooking spray 1 cup frozen spinach, 3 large eggs cooked, drained and 6 egg whites chopped ½ cup whole-wheat grated ½ cup reduced-fat Parmesan breadcrumbs cheese, divided DIRECTIONS Place oven rack in center of oven; preheat oven to 375°F. Remove portobello stems; wipe with damp paper towel Spray baking sheet with cooking spray, and place mushroom caps on sheet. In a mixing bowl, whisk together all remaining ingredients, except 1 tablespoon Parmesan cheese. Coat 10-inch nonstick pan with cooking spray and heat over medium flame. Cook and scramble egg mixture until it just starts to thicken. Remove from heat. Using a large spoon, scoop partially cooked, hot egg mixture into portobello caps. Sprinkle tops with remaining Parmesan cheese. Bake about 20 minutes. Serve immediately.
