Columbia Valley Food and Farm Guide 2021/2022 Buy Delicious • Buy Local The Columbia Valley Food and Farm Guide is a project of Columbia Valley Food and Farm. We are a local food advocacy non-profit supporting the agricultural and food processing sectors in the Columbia Valley. We work hard to build our local food system and to celebrate local food whenever we can. A big thank you for the financial support of our funders and those who have listed in the guide. From Scratch In our market bistro, founded nine years ago, you can enjoy chef-prepared meals in house or take them home. Our baking is all done in-house, with many items baked in our wood-fired oven, and our shelves are lined with delicious condiments. Our cornerstone is highlighting locally grown products on our daily menu, in our retail food line and in the support we provide to small artisan food producers, lining our market shelves with delicious foods. Winderberry / Edible Acres Farm + Café + Catering Winderberry Greenhouse and Nursery still sells the wide array of flowers, trees and shrubs that have been our mainstay over the last 36 years. But over the years the business has grown! My sister and I, along with our husbands, now own the greenhouse operation, and have established our own businesses in the family compound—Edible Acres Farm and Café. The farm, which sits on 5 acres of certified organic farmland, grows more than 85 varieties of healthy fruits and vegetables, and has its own CSA food box program. The healthy produce is used in food served at Edible Acres Café, which runs a catering service as well. The produce is also sold at the Café Farm Shop and other shops in the valley. The fields that feed us all are at the root of their passion for this business: certified organic, local focused on community and proud of it all! We are sixth generation farmers and our family has been farming in the Columbia Valley since the 1940s. Our line of jams and jellies started off as a simple retirement project— we wanted to sell strawberry jam along with our fruits and vegetables at local farmers’ markets. Customers wanted more, so we began experimenting with jams and jellies, and now offer five of each! These products are now sold in numerous retail locations across western Canada. As of mid-March we are operating out of our new facility in Invermere! We will be continuing the production of our jams and spicy jellies and are excited to announce the opening of our new retail space come late spring. Our new retail location will have a variety of unique products that are not offered in other stores as well as custom charcuterie boards loaded with local products, grab-and-go options, merchandise, outdoor garden seating, and a few other surprises! Plant-Based Shepherd’s Pie Topped with Kale and Potato Mash FILLING 2 tbsp. olive or canola oil 1 tsp. dried oregano 1 cup onion, diced 3 cups green lentils, cooked until soft 2 cloves garlic, minced and mashed, lightly 1 cup celery, finely diced ¼ cup minced parsley or 1 tbsp dried 1 cup carrots, grated Sea salt & freshly ground pepper 1.5 cups tomatoes (canned- 2 tbsp. oil for brushing on top. drained and crushed or fresh- seeded and diced) TOPPING 2 tbsp. tomato paste Kale and Potato Mash (See recipe 1 tsp. maple syrup or brown on page 9) or 4 cups plain mashed sugar, optional potatoes. • Place the oil in a large saucepan or Dutch oven. Our local food and food processing sectors have really grown over the past few years and they keep growing. We want to make sure everyone who lives here full-time, part-time, or drops in for a visit, knows which food products are Columbia Valley Grown or Columbia Valley Made. Food Bank The Columbia Valley Food Bank was established in 2000, and has since been providing access to healthy food for individuals and families from Spillimacheen to Canal Flats. Its main activity is to provide food hampers comprised of approximately 23 lbs. per person, which is intended to provide a 5 to 7 day supply of food. The hampers are based on and customised to the client, ranging in size from individual to 9-person. With hives placed from the Coast to the Okanagan, our bees collect nectar from a variety of flowers, allowing us to offer a wide range of honey flavours back home in Windermere. We sell beeswax as well. We also bring home fruit from the various orchards we help pollinate, and sell freshly harvested blueberries, cherries, peaches, apricots nectarines, plums and more. Fruit pollinated by honey bees is on average 50 percent larger than fruit grown without this added boost. Our daughter, Shannon, grew up in the beekeeping business and now helps us to run it along with her husband, Steve Root. 14
