Peanut Butter, Chocolate Chip and Banana Sandwich Ingredients: 2 slices of bread Peanut butter Slices of banana Mini chocolate chips Directions: • Spread peanut butter evenly on both slices of bread. • Layer on slices of banana on one slice. • Sprinkle chocolate chips over the banana slices. • Place the other slice of bread on top. • Cut the sandwich in half or in quarters. Ants on a Log Ingredients: Directions: Celery stalks • Cut celery into 3-inch pieces Peanut butter (Ask an adult for help.) Raisins • Spread peanut butter into the groove of the celery stalk pieces. • Place raisins in a line along the peanut butter. Variations: Use blueberries in place of raisins. Turkey and Cheese Pinwheels Ingredients: 8-inch flour tortillas Soft cream cheese or mayonnaise Shredded cheddar cheese (or cheese of choice) Thin slices of roasted deli turkey Romaine lettuce leaves (or spinach leaves) Directions: • Lay the tortilla on a large cutting board. • Spread the cream cheese in a thin layer on to the entire tortilla. • Sprinkle with shredded cheese. • Arrange a slice or two of turkey on tortilla • Top with lettuce. • Roll up and slice into pinwheels. Sweet Potato Dog Treats Ingredients: 1 sweet potato 2 ½ cups whole wheat flour ½ cup unsweetened applesauce 2 eggs Directions: • Heat oven to 350 F. • Microwave the sweet potato on high until tender, about 6 minutes. • Let cool to the touch. • Cut potato in half (have an adult help with this) and scoop out the flesh and mash with a Potato Masher. • Transfer 1 cup of the mashed sweet potato into a large bowl. • Save the remaining for another use. • Mix the flour, applesauce and eggs in with the mashed sweet potato to create dough. • Roll dough out to ½-inch thick. • Use a Pizza Cutter to cut into tringles, squares or rectangles. • Arrange on ungreased baking sheet and bake until crisp, about 35 to 45 minutes.
